The crystallization basins stretch as far as the eye can see, creating a lunar landscape of rare beauty that attracts pink flamingos, herons, and numerous species of migratory birds. Here, seawater follows a natural evaporation path lasting months, gradually concentrating to form crystals of the purest salt.

The origin of the salt pan is natural: during high tides, seawater entered the lower parts of the ancient Lake Salpi and evaporated, leaving salt deposits. Industrial exploitation dates back a few centuries, when in the 19th century under Ferdinand I of the Two Sicilies, channels and basins were dug to promote salt accumulation.
In the full spirit of the Enlightenment, salt pan director Vincenzo Pecorari began important reclamation projects with the help of highly qualified technicians, including architect Luigi Vanvitelli. These projects transformed the territory, creating the Great State Salt Pans and considerably increasing production.
Today the salt pan represents a perfect balance between millennial tradition and environmental protection, a place where time seems to have stopped and where salt continues to crystallize following nature's rhythms.
The solar evaporation method is the oldest salt production system, completely natural and environmentally friendly. A process that requires time, sun, and patience.
Water from the Adriatic Sea is channeled into a series of interconnected shallow basins. This first step requires perfect knowledge of tides and marine currents to ensure optimal initial water quality.
Under the action of the Mediterranean sun and Apulian winds, water slowly evaporates, increasing salt concentration. This process can last several months and is constantly monitored to achieve the ideal saturation level.
Water moves through the sequence of basins, where evaporation continues to create increasingly concentrated brine solutions. Each basin has a specific gravity that is carefully monitored by our salt pan experts.
In the final basins, the most saturated brine crystallizes, forming salt crystals. This is the most delicate moment of the process: temperature, humidity, and wind must be in optimal conditions to obtain crystals of maximum purity.
Salt is harvested mechanically and washed with saturated brine to remove any surface impurities. It is then dehydrated and washed with fresh water, keeping all its natural mineral properties intact.
